Description
Boji is one of the most famed coffee regions on the planet. Near the city of Yigacheffe, this is the hub of Ethiopian coffee. Coffees from this region are known for their floral nature and diversity of flavours.
This particular coffee comes is naturally dried over a period of 2 or 3 weeks allowing the coffee to delvelop bright fruity flavours.
We offer this coffee as both a filter and espressso roast.
As a filter, it’s floral with heavy notes of clementine. When roasted for espresso, we bring out a little bit more dark chocolate while still maintaining the clementine fruitiness.

About this coffee
Famous as coffee’s birthplace, Ethiopian coffee is well known for its incredible variety of flavours.
The exceptional quality of Ethiopian coffee is due to a combination of factors. The genetic diversity of coffee varieties means that we find a diversity of flavours, even between (or within) farms with similar growing conditions and processing.
Most producers in Ethiopia are smallholders, and the majority continue to cultivate coffee using traditional methods. As a result, most coffee is grown with no chemical fertilizer or pesticide use.
Boji is a washing station located in the Kochere region. It services around 500 smallholder producers. It’s coffee growing area is close to the town of Yirgacheffe, home to some of the most-loved coffees in the world.
Natural processing at the station follows the traditional Ethiopian methods. First, cherries are floated and visually checked for under-ripes, over-ripes and damaged cherries. After washing cherries in clean water, workers transfer cherries straight to the drying field.
They spread the cherries in a single layer. During the first few days, the cherries are carefully turned every 30 minutes to ensure even drying. After a few days, cherries are adjusted so they sit in a slightly thicker layer, which helps slow the drying process.
Drying typically takes between 2 and 3 weeks.
