Description
You may recognise the name Hacienda Sonora from our previous coffee bean selection. Now, you can enjoy a cup of cascara “tea” from the same coffee plants.
This cascara is made from natural-processed coffee, where ripe cherry is carefully dried and aged before hulling.
When brewed, it has sweet notes of raisin, honey, cherry and hibiscus.

About this coffee
Cascara is the dried husk or outer skin of the coffee cherry, which is the fruit surrounding the coffee bean.
After the coffee cherry is harvested, the beans are separated from the fruit, and the leftover pulp is dried to create cascara.
Cascara has less caffeine than coffee but more than most traditional teas, and it offers a unique way to enjoy the coffee plant beyond just the beans.
It also promotes sustainability by repurposing a part of the coffee harvest that is often discarded as waste.
Hacienda Sonora, located at the foot of Costa Rica’s Poas Volcano, uses 100% renewable energy from a hydroelectric generator to power its mills and support the local community with free electricity.
The farm’s 100 hectares include 45 hectares of shaded coffee lands, a 35-hectare forest reserve, and 20 hectares of sugarcane fields, fostering biodiversity for healthy soil and flavorful coffee.
As part of the NAMA Café de Costa Rica project, Hacienda Sonora actively works to reduce carbon emissions and supports sustainable coffee practices.
