Opening a tin of this very unique coffee is like opening a bag of candy: sweet, fragrant and full of surprises!
A coffee that changes with every brew, we frequently taste strong notes of grape, strawberry yoghurt, fudge, lavender and more.
This coffee was used in the 2024 SCA Portugal Brewers Cup competition by Nick Gillott, who placed third.
About this coffee
This coffee originates from Jairo Arcila’s Santa Mónica farm, where it underwent a unique process.
The cherries were first subjected to a 24-hour dry aerobic fermentation, followed by a 50-hour rest inside Grainpro bags at temperatures below 22°C.
Afterward, they were dried on raised beds until the moisture content reached 11%.
This microlot features the Gesha varietal, a coffee variety that was initially discovered in Abyssinia (modern-day Ethiopia) in 1931.
Gesha was first introduced to Panama in 1963 and later made its way to Colombia in 2005.
