Every now and then a coffee makes you stop and go, “wow!”. That was the case for everyone at The Studio who tried this coffee during our cupping process – so we’re not surprised by the cupping score of 89!

Finca Tres Milagros is run by an extremely dedicated coffee-growing family.

The Facusse family has really come into the top tier of coffee producers in Costa Rica.

They are helped by the superb climate conditions and high altitude of 1,550 meters above sea level.

The Facusse family has owned and operated Finca Tres Milagros for over 50 years.

The farm’s operations are vertically integrated and the family oversees all aspects of the production.

The farm was initially planted with entirely Bourbon and Catuai variety trees.

As their focus on specialty coffee grew, the Facusse family diversified the varieties on the farm.

Today, in addition to the Red Bourbon in this lot, they also cultivate Geisha, Typica, Villa Sarchi and other highly sought-after varieties.

Fatima Costa Rica Honey Anaerobic coffee bean cherry

About this coffee

At Finca Tres Milagros, the coffee cherry is selectively handpicked and then floated to remove any under-ripes.

Ripe, red cherries are placed in polypropylene bags to lightly ferment for 48 hours. Then, the cherry is placed in fermentation tanks and sealed.

In these tanks, cherry is fermented anaerobically for another 96 hours.

Following fermentation, the cherries are moved to raised beds. They are raked frequently to ensure even drying.

It takes approximately 20 days for cherries to dry.

Once dry, the cherries are rested at the farm’s warehouse for 2 to 3 months before being milled and prepared for export at Tesoros del Café in Cartago.

This particular coffee is a Red Bourbon Varietal. And with an SCA score of 89, it has one of the highest cuppings scores of any coffee out of Costa Rica this year.

Complex and sweet, look for tasting notes such as clementine, orange, cream, plum, brown sugar and even pineapple.
