Unlike large-scale coffees found in Brazil, coffees from Sitio Fortaleza are handpicked.

They are then naturally laid out on patios to dry in the sun – a process that takes about 17 days.

José Reinaldo Borges comes from coffee. When he was young, his grandfather owned a coffee farm near São Paulo.

Later, José’s family moved to the city. However, city life didn’t agree with them and, eventually, José’s father moved them back to the countryside where they began growing coffee for themselves in 1993.

Today, José proudly continues the coffee farming tradition. He now focuses his energy on specialty coffee production, working with APAS to ensure the highest quality coffee yield possible.

About this coffee

This is a surprising cup of coffee
On the surface, it feels like a “typical” coffee from this region in Brazil. However, the more complex flavours of this coffee sneak up on you.

For espresso, it profiles extremely sweetly. It’s full of hazelnut, caramel, and pecan. It has a punch of acidity to it and maybe a touch of cherry.

Add milk (or dairy alternatives) to this coffee and the sweetness is even more enhanced. It feels like a dollop of Nutella has been added to the glass. The aftertaste is extremely nice with notes of cherry lingering.

For filter, it’s much brighter. The nuttiness is still there. But the cherry is much more prevalent and sweeter.
